Origins
The McNamara brothers Paul and Ed have been raising and selling cattle for many years on their ranches near Carlisle PA. Paul's ranch, called St. Ann's, is nestled against the North Mountain where I hunted with my father as a boy. The streams run clear there thru pasture lands and woods and it is a peaceful place. Terroir is a French term that means "a sense of place" and the land and climate where grapes are grown greatly influence the taste of wine. The land and climate impart unique characteristics into the grape that cannot be imparted by any other region of the world. Similar to how terroir in Napa or Bordeaux is the foundation of some of the worlds greatest wines the terroir in Carlisle underpins some of the greatest Angus and Wagyu beef the world has ever seen. Incredible marbling, explosions of flavor, a variety of textures, skilled butchers, and fans who are fiercely loyal are all testimonies to the beef being produced at the St. Ann's ranch. Pasture raised, organic, no hormones.
I have worked in and eaten steak in many of the famous and not so famous steak restaurants in New York City over the past 30 years and the steaks I get from St. Ann's consistently are better. Not massed produced, one at a time, some Angus and some Wagyu and a mix of both.
